01 What happens now

Nothing gets fired into a void, it lands on the bench

Your enquiry went straight to the same inbox Callum reads between heats, not to a shared queue that nobody owns. That means a real reply comes back from a real person, usually the same day if you wrote during working hours. If all you did was tick the newsletter box, the next thing you hear from us is when there is a batch worth writing about, not a welcome sequence.

If your message was about a commission, expect a few questions. Blade length, steel, what you cook most and how the knife should feel in your hand. If it was about sharpening or a rehandle, expect a turnaround window and a price. Either way, if you have not heard back inside two working days, something has gone wrong somewhere, so ring the workshop on +64 7 849 3027 and we will sort it.

02 — Worth doing while you wait

Three things that make the first reply quicker

Take a photo of the knife you already reach for

Stand it on a plain surface, snap the side profile and the handle, and send it through on the same thread. A photo tells us more about the balance point and handle length you already like than three paragraphs of description, and it usually cuts one reply off the conversation.

Decide roughly which line you are leaning towards

The Damascus knife is the prettier one and takes a keener edge if you sharpen on stones. The powder steel knife is harder, more stain resistant and more forgiving on a busy bench. You do not need to commit now, but knowing which way you are leaning means the first reply can be about your knife rather than about steel metallurgy. Measure if you can

Blade length and handle length off the knife you use most, in millimetres. Even rough numbers beat no numbers.

Home cook, working chef, fishmonger or something else. It changes the blade we would build for you.

03 — If it is urgent

The form is not the fastest route if you need an answer today

Email goes out once a day in a batch, and the forge does not stop for it. If your commission has a date attached to it, or you are bringing a knife in for sharpening before service, ring the workshop direct. Anyone at the bench will pick up unless the grinder is running, and we call back the same day if we miss you.

04 — What we would ask first

The four questions that shape every commission

  • Blade length 180mm, 210mm, 240mm or a 270mm sujihiki. If you are not sure, tell us the biggest thing you cut.
  • Steel line Damascus for the pattern, powder steel for the edge holding under a full shift on the board.
  • Handle Macrocarpa and rimu are standard. Black maire, stabilised burl or a spacer stack runs extra.
  • Timing Five to eight weeks typical. If there is a date attached, say it now rather than later.
